Preparations for winter
|
|
Carrots. In the fields where the carrots are going to spend the winter, we are putting on their "winter coats" at the moment. They get covered by a thick layer of straw to protect against the frost.
By doing this, we are able to harvest fresh and crispy carrots all winter long. Unfortunately we have to share it a little bit with the mice, which are enjoying the warmth from the straw.

Potatoes. We are also well under way with the harvesting of the potatoes. Different from the carrots, they all have to get inside before the winter.
|
|
Hamburg parsley and parsnip. The root crop season has really settled in now, and we have started harvesting our parsley root and parsnips. Pretty, healthy and tasty root crops that has endless ways of use.
They can be baked, fried, mashed, pureed, boiled and whatever you fantasy tells you. It is lovely that the possibility of getting fresh, rich-in-vitamin, Danish vegetables, even when the summer is over.

It can be tough to separate parsnips from parsley roots (parsnip on the left), but there is a big difference in the taste.
