Borecole and Christmas time
December 16, 2001 - Tåstrup, Denmark

December is a dark time, when it like this year has not been snowing yet. It is dark when we start working at the packing station in the morning. We are almost done harvesting the fields. All the cabbage was cut last week, and the last carrots that are not covered with straw are harvested right now. We are hoping for good weather the next weeks, because we have a lot of work harvesting and selling borecole. That is one of the few vegetables that sells best during Christmas time in Denmark. When we harvest the borecole, we drive a tractor with a special wagon for this kind of work. 3-4 people go between the borecole and take off the leaves with their hands and put them in plastic bags. These will automatically be driven in boxes onto the wagon.

When the wagon is full, it will drive to the packing station and here the bags with the borecole leaves will be closed with heat, and we also label them with information for the customers. And the very next day, the bags with the fresh borecole are in the Danish supermarkets. It can be a hard job to harvest the borecole, when it is very cold, and it is blowing and snowing in the morning. But when there is no wind and the sun is shining, and you are working between all this fresh green healthy crops, it`s just wonderful.

Borecole is one of the few crops in Denmark, that is green and still growing at this time of the year. There are still a lot of vitamins in the leaves, and this crop has very deep roots so the crop is an expert at finding all the minerals we need to keep our bodies healthy. It is freezing a lot in Denmark in the winter, but the borecole can stand it for some time. But when it is freezing very hard, and it is blowing for many days, it will be damaged so we have to eat it now

Borecole can be used just as it is. You can cut it in small pieces and eat it with nuts, raisins, oranges or heavy cream. Or you can use it in soups. It can also be cut into pieces and cooked in a pot with sauce.
